Pumpkin Cheesecake Breakfast Bars

The fall season is upon us and you know what that means! All things pumpkin! While pumpkin can add a rich, earthy flavor to everything from lattes to brownies, it also has a lot of surprising health benefits! Each one-cup serving of pumpkin contains over 13g of dietary fiber, almost twice the daily recommended intake of vitamin A, and contains substantial amounts of tryptophan. Respectively, these components help to protect your heart, improve your vision and skin, and promote better sleep and a more stable mood.

Pumpkin Cheesecake Breakfast Bars

  • 2 cups rolled oats

  • 1, 15 oz container ricotta cheese

  • 2 eggs

  • ¾ cup pumpkin butter (we used the one from Trader Joe’s)

  • Non-stick cooking spray

Preheat oven to 350 F. In a food processor or blender, add rolled oats and chop until a coarse flour-like consistency. In a large mixing bowl, blend ricotta cheese, eggs, and pumpkin butter. Slowly mix in the oats until well blended. Spray a 9x9 glass baking dish with non-stick spray. Add the mixture to the tray and bake for 35-45 minutes, or until a toothpick  comes out of the center clean. Let cool, cut into squares, and enjoy!
