Cinco De Mayo - DIY Taco Bar

Nothing says festive and fun like a DIY (Do it Yourself) Taco Bar. It’s a great way to get your kiddos excited about veggies and helping out in the kitchen. Not to mention it’s super easy to do. Once you try it, it’s likely to become a weekly dinner tradition for your family to look forward to! Something as simple as a taco bar can plant a seed for a healthier mealtime routine.

Here’s what you’ll need...

Taco Essentials


We recommend using traditional corn tortillas to get the biggest bang for your nutritional buck, but if your family prefers the hard taco shell, or soft flour tortillas, go for it!


You can choose from black, pinto, kidney, or any other type you like! Beans are loaded with protein and fiber, making this meal both tasty and filling.

Tip: If using canned beans, give them a quick rinse to get rid of excess sodium.


You can certainly grab your go-to shredded iceberg lettuce, but if you’re feeling adventurous, mix it up and grab some romaine, kale, or arugula to add some crispy freshness (and bonus nutrients) to your taco.

Avocado (or Guacamole)

Avocado is loaded with healthy fats and fiber, and the smooth and creamy texture make it a perfect taco topping. Mash together some fresh avocado and a squeeze of lime (the lime adds flavor, but also prevents the avocado from browning) or, go the distance and make your own guacamole.


Salsa is a great way to sneak some vegetables into any dish. Use it to top your tacos, or serve it on the side with some fresh bell pepper slices. Use the peppers to scoop up the salsa as an alternative to fried tortilla chips.


You can grab your favorite shredded cheese to sprinkle on top of your tacos or try something more traditional: cotija cheese. This is a delicious Mexican cheese that you can shred yourself to give your tacos a little extra flavor.

Greek Yogurt

We like using some plain greek yogurt as a substitute for sour cream. It’s much higher in protein, making your tacos even more filling. Mix in a little lemon or lime juice to get a bit more of that traditional “sour” cream flavor.

Optional Toppings

Extra Protein

Chicken, fish, ground beef, or shrimp are a great way to add some extra protein (and flavor) to your tacos. Cook them up over the stove with a packet of taco seasoning and dash of olive or coconut oil.


The more colors you have at your taco bar, the more variety of nutrients you’ll have. Add some (thawed) frozen corn to balance out the spicy taco seasoning flavor with some sweet cool corn (and add extra fiber). Some grocery stores also sell frozen roasted corn which adds some fresh-off-the-grill flavor.


Some like it hot. Add jalapeños at your own risk (and maybe keep them away from the little ones!).


You either love it or hate it. If you love it, this really shouldn’t be considered optional. This simple herb is the perfect topping to round out the flavor on your tacos. Not to mention it’s loaded with antioxidants, helping keep your heart healthy.

Once you have all of your fillings, set each on up in a bowl with a spoon. Let everyone grab a few tortillas, and start filling away.
